What is Longsilog?
Longsilog is a classic Filipino breakfast trio:
- Longganisa: Garlicky, slightly sweet Filipino sausage (choose Vigan, Batangas, or sweet varieties!).
- Sinangag: Garlic fried rice, crispy and golden.
- Itlog: A perfectly fried egg (sunny-side up is my favorite!).
The name is a portmanteau of “Longganisa,” “Sinangag,” and “Itlog.” It’s simple, flavorful, and utterly satisfying—a true taste of home.

Here’s how I make it in 20 minutes:

- 1 cup cooked rice (day-old rice works best for crispy sinangag)
- 2-3 cloves garlic, minced
- 1 large egg
- Oil for frying (coconut or vegetable oil)
- Salt and pepper to taste
- Optional sides: Achara (pickled papaya) or sliced tomatoes for freshness.
Steps:
Fry the Longganisa:
- Slice the longganisa diagonally. Heat a tablespoon of oil in a pan over medium heat. Fry the slices for 3-4 minutes per side until caramelized. Set aside.
